
So I decided to try the chicken nugget recipe from my cookbook. These have spinach and flaxseed in them. They taste good they just don't look very appetizing. I cooked them on the stove with olive oil and I wonder if I baked them if they would come out better. I think they would. Anyway, I thought there would be no way Bianca would try these, but she actually did. She ate a whole one and then said, "It's black Mommy, make it orange. I need the orange nuggets." The recipe says you can use sweet potato instead of spinach, so I think I'll try that next time plus baking vs. frying. It's worth a shot. At least she ate one!
That's so funny! Carter won't eat them either, but he'll eat the frozen kind that look like McDonald's. How do kids gravitate toward that stuff? Let us know your progress! (I've got a bunch in the freezer right now that I need to eat up myself since Carter won't)

Ha! I love Bianca's review. :) One thing I've learned about flaxmeal is that it browns a lot faster than plain flour or cornmeal. So I bet baking would work a little better. Good luck!
