I'm always interested in finding out what people eat for dinner. And how my friends come up with recipes to make that are fast and taste good. I have a few of my own but I'd like to try new ones and swap with you all. So my friend Rachel and I came up with the idea to start a recipe blog for Mom's, who have busy lives but still want to have a good meal with the family when dinner time comes around. So, fast, easy, tasty meals. This is what I'm asking you to do: get a list of meals out that you make on week nights and email them to me at lhall1977@gmail.com so I can post them on the recipe blog (www.mealsformommies.blogspot.com). (Still under construction.)Rachel and I will post some of our recipes too. I hope to get a good amount so I can try yours and broaden my horizons on week nights. I will include one here to begin and get one from Rachel also. Thank you ahead of time for your interest and contributions to this blog!
One Dish Chicken and Rice
1 can cream of mushroom soup
a couple sprinkles Liptons dry onion soup
1 1/2 cup water
3/4 cup uncooked rice
3 boneless skinless chicken breasts
In 2 qt. shallow baking dish mix soup, water, onion mix, rice. Defrost chicken and place on top of mixture in pan. Cover, bake at 375 degrees for 45 minutes or until done.
I like to cut the chicken into smaller pieces after it's cooked so you get smaller bites with the rice.
So, this is easy and pretty quick and I love it. You might all have it but hopefully it will be new to some of you. Feel free to contribute recipes for anything, desserts, appetizers, soups, whatever.
I look forward to getting your emails!
I'm going to get some to you, really I am. In the next couple of days, I hope. It's a great idea!!
