Eric has been making these for me almost every day since he made the first batch. They are a recipe from my to be sister in law, Lauren. They are really easy and soooooo yummy. You've gotta try this for dessert sometime:Ingredients:
4 squares bakers semi sweet baking chocolate
1/2 cup (1 stick) butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 Tbsp. flour
frozen rasberries (optional)
Preheat oven to 425 degrees. Spray a muffin tin with cooking spray.(or you can use souffle or custard dishes if you have them) Microwave chocolate and butter in large bowl on high for 1 minute or until butter is melted. Stir with a wire whisk until chocolate is melted. Stir in sugar until well blended. Blend in eggs and egg yolks with wire whisk. Stir in flour. Pour into muffin pan. Makes about 6 cakes. Bake 12 to 13 minutes or until sides are firm but center is soft. While they are baking place raspberries in a bowl, mash up and add sugar to taste. After removing cakes from oven let them stand 1 minute. Run small knife around cakes to loosen. Invert cakes onto dessert dishes. The centers will be runny. Add raspberries on top. Yummy!!!
